Sometimes you have an idea… and sometimes an idea has you. Mo’ Bay Beignet Co. was divinely inspired. The name was floating around in my mind long before it became a reality. While making beignets and syrups in my kitchen one day back in 2015, I had a thought about packaging them up to sell them. Then the name “Mo’Bay Beignet Co.” dropped in my mind… and it never left.

In May 2019, out of the blue, I heard the word “now”. I knew the Lord was speaking to me, and somehow I knew it was about Mo’ Bay Beignet Co. I prayed and knew He was leading me to package my beignet mix and my syrups and to start selling them as a fundraiser to help send my daughter off to college in California. So I moved forward.

After only a day of the fundraiser being on social media, the owner of a local market contacted me and wanted Mo’Bay products on her shelves. She said, “It’s going to be a huge hit.” In a matter of months, my products were in close to a dozen stores in Alabama, including Priester’s Pecans on 1-65.

Despite the success, I was growing weary. It was a lot of work and I didn’t really know my “why” yet. Why was I doing this? I knew the Lord led me to. I just didn’t understand why. Had it not been for something a man in California said to me before Mo’Bay Beignet Co. had even begun, I don’t believe I would have kept going.

While standing in my kitchen one day crunching numbers on the expense to keep wholesale production going, what the man in California said came back to me. “I see you, I see a lot of math, and I hear the words it doesn’t add up. I believe I’m supposed to encourage you to keep moving forward when you feel like something isn’t adding up.” In that moment I knew I couldn’t quit.

I knew my next step was going to be a brick and mortar location in downtown Mobile, AL. Many God winks and serendipitous events accompanied the next six months before I finally opened the doors to Mo’Bay Beignet Co. in February 2020. I had no idea how any of it would get pulled off, but God always had a plan. He was simply waiting on my “yes” to get this grand adventure started.

Mo’ Bay Beignet Co. had a wildly successful opening. Then it survived and flourished through the incredibly difficult year of 2020. I believe the year 2020 was always meant to be the year that Mo’Bay Beignet Co. would open its doors and begin bringing joy into a community, through something as simple as great coffee, authentic made from scratch beignets, and friendly service.
